Riesling late harvest

Hello all I am able to get Riesling grapes from a local grower. My question is they are not willing to wait to make them late harvest grapes since they want them all picked this week. Can I add more sugar to the must after I press them to create a simulated late harvest effect? I know that once the Alcohol content reaches a certain level the yeast dies and that is what leaves the residual sugar in the wine.

Sort of.

you can add alcohol to your wine by adding sugar, but you won't add any flavor. Yes, the sugars are concentrated, but so are all of the other grape flavors. You could try adding some white wine concentrate to the must to try to simulate the late harvest style.
