I have been reading up on reviving a vial of Yeast Bay Saison Blend and have the procedure down. The vial is roughly 4 months past its best by date. I am wondering though, with saison yeast being tricky to ferment as is, is it still worth giving it a shot? Should any additional steps be taken to insure a better chance at revival? Thanks for any help.

I would make a smaller starter and anticipate that it will take a while to get going. After the initial starter is done, crash it, decant, and do a proper sized starter.

I have used yeasts that >1 yr past their expiration date without problem (except for the slow initial starter).

Cheers

I recently used a vial of TYB Wallonian Farmhouse that was 3 months out of date.
Starter1 was 400ml at 1.025 and the bugger was like an enragex zombie!
Starter2 of 1.035 650ml of wort and I had enought creamy yeast to be able to give a friend some.
Just do a two step,or three, depending on how big the beer will be.
It seems to me,after also using out of date Funktown, that these yeasts are beasts even when out of date. So much so,that when I got the Funktown,I just threw it into 4 litres of 1.038 beer to get a bloody good, drinkable starter
