I just made 2.5 gallons of a experimental cider.

I used apple juice, 1/2 teaspoon of pectic enzyme per gallon, added 1.5 cups of red hots candies that I boiled down with apple juice into a pourable syrup and used 1/2 a vial of white labs English cider yeast. I was a little worried that the yeast was expired, February 2012, but used it anyways, started it at 2:30 yesterday and it's bubbling every 10 seconds or so now! It's at 72-74 degrees as it sits.

It's a carboy from the biotech company I work for. They throw em out every once in a while, got a 5 gallon one today. They work great.

Got this tonight, 5 gallon carboy. They were gonna toss it. They use them for a bleach/acid solution to pass items into "clean" areas. I triple rinse them and they work great.
