I brewed this beer a few months ago, and my friends seem to like, so I'm going to do another batch. The original was a partial mash / partial boil, but I have since upgraded my equipment enough to do AG / full boil.
When I brewed this the first time I used ingredients that I had lying around, so the hop additions were pretty much just what I had on hand. Firstly, what kind of beer should I label this as? I've been calling it an Amber Ale, mostly because of its appearance, although I don't think that is what it actually is. Secondly, I want to substitute the Fuggles with something else, but I'm not sure what will work well. Here is the original recipe:
6.6 lbs Pale LME
2.5 lbs 2 Row
1 lb C-10
2.0 oz Toasted 2 Row
2.0 Chocolate Malt
0.80 oz NB Boil 60 min
0.30 oz Fuggles Boil 60 min
0.90 oz Fuggles Aroma 5 min
WLP001
Mash: 150* For 60 min
OG: 1.062
FG: 1.012
IBU: 26.6
SRM: 10.4 (Looks darker red because I boiled LME for entire 60 min)
The random Fuggles amounts were to get me to about 25 IBUs since I only had .80oz of NB. Here is what I came up with for the AG version:
10 lbs 2 Row
1.5 lbs C-40
2.0 oz Toasted
2.0 oz Chocolate
1.0 oz NB
XX oz Aroma Hops (maybe 15 and 5 min)
WLP001
Mash: 150* for 60 min
OG: 1.055
FG: 1.010
IBU: 32
SRM: 12.7
Any ideas on what aroma hops to use? The only reason I'm shying away from Fuggles is I'd like to use an American variety. I initially thought Cascade, but I'm not sure how it will work with the toasted/chocolate malts. I switched the C-10 to C-40 to make up a little bit of the color loss from not having the LME darken the wort after an hour long boil.
