So is it possible to do a "real ale" with a party pig by using it has a secondary and then adding sucrose or whatever? I can't find where in hell one can get an empty polypin in the states!
 
I do something similar with Tap-a-drafts. My bottles don't hold pressure for long, so I try to drink it all up in a couple of days. The first few drafts are foamy and carbonated, but after the pressure settles down it drinks more like a cask ale.

I've kept one for as long as two months and I could still get a trickling flow of flat ale...but this was a yam brown, so it suited the beer well at the time.

Do u add priming sugar to the bottles and let it condition that way?
 
Yep, I add sugar according to whatever brewing program I use direct to the bottle, add my fermented beer as a secondary ferm/carb/conditioning step. The company that makes tap-a-draft also makes a different type of cap with a pressure release seal. This lets you carb in the bottle without worrying about over pressurizing.

Once it's conditioned enough, I swap the cap for the tap, add a CO2 cart, chill and then consume.

Easy enough for small batches, or if you'd like to bring a small batch to a party.
