I'm about ready to bottle a Raspberry Wheat and the raspberry extract bottle says to "use to taste" and recommends starting at .25 by volume. Never having made this, I was wondering how much to add. Also, how do you go about tasting it? Do I just take small amounts out as I stir it in? I realize my taste may not be yours, but I'd like a starting point. I've got a 5 gallon batch and 4 ounces of Crosby and Baker Natural Raspberry Flavoring.

What I did with spruce essence is to take a very small oral syringe (they look like this:

, I was given a free handful of various sizes at the Target pharmacy)

Then calculated a ratio based on the amount I wanted to add to the whole batch, then applied to a single bottle (or glass, or whichever predetermined volume you want). So to replicate say, 1/4 oz of the essence into 4.5 gallons (my typical bottling volume), it worked out to 0.15ml of essence per 12 oz. So I drew that much essence in a graduated 1ml syringe, put it in a glass (it was literally about a drop's worth), and then poured a bottle of beer on top of it, going with the beer I had closest to the beer it was going into. Tried it several times at different concentrations until I found the concentration that I liked.

I would assume the ideal concentration for a raspberry flavoring will be higher than spruce essence, but that's the method that I would use.
