I've only made two wine kits and my third is a Port. A Winexpert Apre's Desert Win (Port) kit. I misread step 3 of the instructions and racked into a secondary vessel. I was supposed to just add the flavor pack and Chitosan into the fermenter and THEN rack to a secondary 25 days later.

Was there supposed to be some secondary fermentation from that flavor bag? Are there fermentables in that pouch or is it just what it says... a flavor pack? The more important question is how will my mistake affect the wine?

Kits rely on proper combination of yeast and sugars to start primary action chitostan is a clarifier and flavor pack is sugar, if you left behind quite a bit of lees, the juice may not have sufficient yeast/sugar to finish and the abv. may be short, I would check brix level ensure 21 is met & add a packet of 1118 cross your fingers.
