I'm doughing in 4.5 gals of water & mashing out with 2.5 gals of water for a total of roughly 7 gals. My question is when I'm setting up my water profile and selecting gallons of mash water, do I use the 4.5 gals that will be sitting there for 60 mins? or do I figure the entire 7 gallons?
