Put a brew of java stout in primary fermentor Sat. afternoon with an OG of 1.068, This morning (Monday) noticed airlock was bubbling at a pace of only about 2-3 burps per minute so I took a gravity reading and it read 1.016.
Not quite my projected FG yet but it appears it got to that point awfully quick.
This is my first time doing a heavy stout so wondering if this is normal?? all my other brews have taken 5-6 days.
Am I worrying over nothing??
 
I have had that same quick, 48 hour vigorous fermentation in just about all of my brews. I just let it sit in primary for about a week, and then move it to a secondary for about two weeks. Works just fine. By the way, did you use liquid or dry yeast?

I'd just leave it in the primary for the 3 weeks. Secondaries unnecessary unless you're harvesting yeast or racking onto fruit, and extra unnecessary for something dark like a stout where clarity isnt an issue.

Well, I'm not going to disagree. But I have ONE six-gallon Better Bottle and TWO five-gallon Better Bottles. The sixer is my primary fermenter; the fives are my secondary. Can't brew and start fermentation without a fermenter available, so I customarily use secondaries. I DO NOT like to ferment in the five-gallon bottles. There's just not enough "head space" for the krausen to form.

So, I rack to secondary as a practical matter, and not because it will make better beer.
