Which yeast produces the heavy banana/bubble gum esters found in beers like Ayinger's Ur-Weisse (their dunkel)? I am trying to avoid citrus and peppery flavors. Thanks for the help, I haven't ventured into this category yet and want to get it right with the yeast the first time around.
 
Yup, 3068/300 is the epitome of the banana/clove flavored hefeweizen yeast.

If you're trying to avoid citrusy/peppery flavors choosing the proper Noble hop is important. Keep it under 20 IBUs.
