In Brewing Classic Styles, the grain bill is is

12.25 lb British Pale Ale (going with Maris Otter)
0.50 lb Wheat Malt (what kind?)
0.50 lb Biscuit 25
0.50 lb Crystal 40
6 oz Crystal 120

I learned today that my LHBS has closed permanently (oh no!) so I'm unable to ask them "what kind of wheat malt?" Going to order from Austin Homebrew Supply....they have a few wheat malts: Caramel, Midnight, Red, Torrified, and White. Does anyone know which it would be?

Red and white are the regular wheat malts. For regular wheat malt I use white, but red would also work OK.
Caramel is a crystal, midnight is a very dark roast, and torrified is unmalted and gelatinized.
 
Well a British brewer would be using British wheat rather than (higher protein) North American wheat.

But traditionally, British brewers tended to use torrefied, although it's not malted. If you have access to it, that's what this Brit would use.
