I found some cider at the store that contains both ascorbic and malic acid. Would this be ok to use as long as there are no preservatives?

I don't know much about cider but I don't see it being an issue. Ascorbic acid is just vitamin C which is naturally occurring in apples. Malic acid is used as a food additive but was originally isolated from apples and therefore is also naturally occurring in apples. I think you should be good to go!
