I currently have a Mexican Pilsner similar to Corona on day 7 in the primary and it is still fermenting like crazy. It is my first lager I have ever done and I have been able to keep it around 50-53 degrees just using outside temperature. What I'm wondering about is the recipe calls for moving it to the secondary at day 10 but I'm really just wanting to leave it in the primary for like 3 weeks and then be done with it. How important is the secondary for a lager like this? Like I said I have no experience with lagers before so I'm kinda lost. Thanks in advance for any info....
