Today I brewed a Dunkelweizen and used about 3 lbs of wheat dme. I had trouble when mixing the wheat DME into the wort after taking the pot off of the heat. A lot of the wheat coagulated into some pretty large rocks which were difficult to dissolve. Should I mix wheat dme into some cold water first and then add it to the wort next time?
:mug:

I don't take the BK off the heat for DME additions. I just add slowly and stir like mad and keep stirring until all that stuff is dissolved.

I just used wheat dme the other day and had the same issue. I just stirred the he'll out of it till all the chunks dissolved. Turned out great! The water idea probably would work, maybe buy a huge whisk.

+1 to that. wheats are my favorite. do like that, and it'll work. add slowly and stir steadily

sprinkle it in more slowly, instead of trying to pour it in like a more granulated sugar.
the lumps that do form, smash against the side of the kettle to break em up.

Use the biggest whisk you have and that should help break up the clumps when they form.

K, here's what I do... and I've been making a bunch of hefe's lately:

1. Use a whisk. Try to find a long one, kinda hard but they're out there.
2. I pour my DME into a large bowl till it's mostly full then slowly pour/sprinkle the DME into my wort as I'm whisking it in - I do this at about 180 degrees ever since having a boil over when adding to a boil.
3. When the bowl is empty simply refill and repeat till all is gone.

After it's all in there I put the heat on high and bring to a boil. I've never once had any clumping issues whatsoever. But observing how everything seems to break down with a 60 minute rolling boil I'm not too sure it would matter much anyway.

What I do is use a slotted kitchen spoon or wisk, and have someone pour it into the pot for me. That way they can pour slowly and I can constantly stir

Ive never tried it but i was wondering if it would be worth it to us a flour sifter to sift the dry extract into to wort so it doesnt clump. Anyone ever try a sifter?

I only use DME. My stirring tool is a slotted spatula. It does quick work of the clumps by breaking up the clumps in the slots.
It works as a decent aerator as well.

Everytime I have used a whisk with DME it ends up clumping at the bottom of the whisk.
