How do I make a fruit purée? Is it as simple as placing say a few lbs of apricots in a blender then pitching it into the secondary?
 
Yeah, that's the basic idea. You may want to also freeze them at some point as it helps break down the cell walls. You could do that before or after blending but I'd think doing it before would make the blending a little bit easier.
 
Hmmm, that's a good question. Apricots can be fairly dense. I've never used them before but I'd probably try blending them without using any water. If it seems too thick, it's not blending, or it seems like it's burning up your blender I'd try adding a little bit of water at a time. Just be careful that you don't add so much that it dilutes your beer.
