That 2" square tubing is more than structurally sufficient to build a home brew stand. How many feet you need entirely depends upon your build.

I went with 11 gauge so I could drill\tap it. It was 2" square. $20\8' is expensive.

2" square tubing is more than sufficient. I used 1" x 2" for my modified 2 tier, I do t remember the gage though. In hind sight I wish I would have paid the extra and gotten stainless steel.
 
yeah, i did 1.5" x 1.5" 16 gauge recently and it's beefy. i think i used around 35' of steel and got it for 70
