So I got this porter that I've been sitting on in a secondary for some time. I was going to try to bottle today but I'm trying to save my DME for my next beer and I don't want to use cane sugar cuz I've read some bad thing about it.
Am I going to funk my beer up if I add 1 cup of maple syrup to one quart of water, boil and go from there?
The porter was semi-intended for Xmas gifts so if it's god awful I can just punt it off to my loved ones and closest friends.
 
If you've never done it before, I'd hold off on using it in a batch you intend to give away.

Maple does ferment, but it's a strong flavor that takes time to mellow. I made some maple mead a few years ago and it still hasn't peaked yet.
 
I made a maple porter last year. I used pure maple syrup 1 Cup boiled with 1 cup water. It Conditioned just fine and tasted great. In a heavy tasting beer like a porter the Maple is not as pronounced as you would think. :mug:
