I've been doing my homework investigating how to brew a cream ale with the ingredients I have at hand (I live in Latinamerica). One suitable source of corn we have readily at hand here is precooked cornmeal. It is different from the cornmeal you find elsewhere in that, well, it is precooked
Since this cornmeal is already precooked, I suspect that I can skip the mini mash (cereal mash) and add this cornmeal directly to my malt mash, right? Since it is precooked, this cornmeal should already be gelanitized, right?
