I may have fermented a kolsch at too low a temp. I had it at 52 deg. and the air locked bubbled for about three days and now nothing.

I have a great krausen so I know it fermented some.

I also have a big yeast cake at the bottom of the carboy. I think I've read where it's ok to stir up the yeast cake during fermentation. Is that true?

I raised the temp up in my freezer to 58 deg. and I'm not seeing any activity. I have not checked my gravity since I pitched as I know it's way to early for the beer to have fermented.

I pitched the Wyeast 2565 Kolsch yeast and built a starter that sat at room temperature for 11 days before I pitched it. I know that's a little long, but life got in the way on the original brew day I had set aside.

I decanted the liquid and pitched the cake only.

Any other suggestions?

Feel free to raise the temp into the 60's and agitate the vessel to stir up the yeast-gently and then give it time, maybe another week and check gravity
