I may have a stalled fermentation - 5 gallons of juice at 1.006 using s-04 that may be because the temp got too cold. It's currently in secondary (probably shouldn't have racked it without checking gravity). I upped the temp and have stirred up whats left of the yeast. My question is: if the rest of the sugar doesn't ferment out, can I pitch a fresh starter at high krausen to try and get it going again? I plan on giving it a month before checking it again, but am just curious of my options. I am going to bottle carb, which I did once last year with excellent results (the cider fully fermented before bottling), and have no intention on back sweetening - I like my cider dry.
