Looking to brew my first all grain. I don't have the kettle volume so I am using beersmith to scale recipe. It is telling me to use .6 packs of yeast. Is there a detriment to using the whole pack that will affect the beer? I don't want to store the remaining yeast if I only use .6 of the pack as I don't see a day I will need .4 of a pack. Should I just use the whole pack or actual try to measure .6 of a liquid yeast pack?

Over pitching even by a factor of two isn't going to be terrible. I've heard many of the big guys over pitch intentionally to turn beers around faster.

It may lead to faster fermentation, but lower ester production, thin mouth feel and a yeasty taste. I would probably pitch the correct amount, and get rid of the rest. Then save the slury for another batch.

Another option would be to do a partial mash, or a partial boil. My brew kettle is limited to about 10 lbs and 3.5 gallons because I brew stove top. I've done 5 gallon batches by supplementing although I prefer to make more smaller batches to create a variety.

Thanks for the replies...it would be a three gallon AG batch, something I could boil on my stove.
