I was low on my liquid yeast stash, so decided to go with dry yeast. I split this recipe into two 5.5 gallon fermenters, and used Mangrove Jack's West Coast M44 in one, and S05 in the other.
I'll be honest- I'm not a fan of S05 as a rule, and never used Mangrove Jack's before. But since S05 is supposedly a chico strain, related to my fave WLP001, I used it.
The recipe (11 gallons into fermeter):
25 lbs Pale Malt (2 Row) US (2.0 SRM) 92.6 %
1 lbs Caramel/Crystal Malt - 40L (40.0 SRM) 3.7 %
1 lbs Cane (Beet) Sugar (0.0 SRM) 3.7 %
2.00 oz Columbus (Tomahawk) [14.00 %] - FWH
2.00 oz Simcoe [13.00 %] - Boil 20.0 min
2.00 oz Columbus (Tomahawk) [14.00 %] - Boil 5.0 min
3.00 oz Simcoe [13.00 %] - Whirlpool at 180 20 minutes
2.00 oz Centennial [10.00 %] - Whirlpool at 180 20 minutes
2.00 oz Centennial [10.00 %] - Dry Hop 5.0 Days
2.00 oz Columbus (Tomahawk) [14.00 %] - Dry Hop 5.0 Days
2.00 oz Simcoe [13.00 %] - Dry Hop 5.0 Days
0.50 oz Centennial [10.00 %] - Keg Hop
0.50 oz Columbus (Tomahawk) [14.00 %] - Keg Hop
0.50 oz Simcoe [13.00 %] - Keg Hop
Both yeast strains ended at 1.010, at 7.2% ABV.
The M44 was very nice- firmly bitter and nicely hoppy. Still cloudy at tasting.
The S05 was tart in the finish, not as bitter, and a bit harsh in the swallow. Also still cloudy.
These two kegs are amazingly different, and I find that the beers differ so much that I wouldn't believe it came from the same exact boil and dryhopping if someone else did it.
I'll taste again once carbed completely and clear, as I'm sure that will make a big difference.
I don't know why I never used Mangrove Jack's before, except that I rarely use dry yeast. I dislike S05 as a general rule, and haven't used it in years before now. I never did a taste test like this before, though.
