Stillwater Classique is possibly the beer I drink the most, and I'm pretty sure it's just the old National Premium malt bill (six row, rice, corn) with Saison yeast. I've attempted to clone it twice, with varying results.

Tl;dr Corn all the Saison
We just got cases of Classique in today

Thanks man. I figure because all of our beers taste of rotting taint adding off flavors on purpose might help! The thought behind the beer is when farm workers from Wallonia first immigrated to the US and made beer they may have been using corn so I tried to replicate what they might have done. I didn't add whole ears, I cut the kernels from the cob and added some husks. The corn was very sweet because of the Summer we've had and gave 6 points to the gravity even though it was only roughly 10lbs. I also used 10% flaked maize. I added more kernels, cobs, and husks to the whirlpool and knocked out.

This beer will basically be fermented corn soup! MMMMMMmmmmmmMMMMMM

Did you check with Sam's legal team before the brew?
 
I think they are going to age their next beer in one of the old blast furnaces.

That's the Carrie Furnace, right?

I mean it would be really cool it they could turn something like that into a production facility. Still think it will be for a festival though.

I called beer express in Crafton he said all his suppliers him they didn't have any and it wasn't coming. That was all the looking I've done
