Hi Guys,

I think i might have just made a slight error, i was making a brewcraft kit and i pitched the safale us-05 yeast that came with it at 30 degrees Celsius, it has since dropped to 26, do you think i will have killed the yeast pitching it that high?
 
It's on the high side, but they should be fine if you brought the temp down quickly there after
 
Yeast love it that warm. Unfortunately they usually make bad tasting beer at those temps.
 
You won't have killed the yeast, and your beer will probably be fine, but you will likely have increased ester and/or fusel alcohol production. Even 26C (79F) is too high. Many recipes and even some yeast labels advice pitching a little higher than you are fermenting. This is bad advice! Ignore it! You will get much better results pitching at- or below your fermenting temperature. Most ester production occurs during the initial growth/lag phase of fermentation. Pitching high will increase ester production. Fermenting high will increase fusel alcohol production.
 
thanks guys, the temperature will definitely come down a lot, my last batch which i bottled tonight before starting this new one was sitting between 18 and 20c for nearly all of the fermentation so fingers crossed it should be ok
 
I personally pitched that high once on accident ingot it cooled down to the correct temp after a few hours and it fermented fine beer tasted great. I try not to do that any more and pitch at 27C or less.

That's still way too warm. I pitch between 60f and 62f, then let it rise to 65f and hold it there.
 
Awesome thanks guys that puts my mind at rest, this is only my third batch and my first time making anything more challenging that adding a tin and some sugar, looking forward to this one a lot!

Hi Guys,

OK so i definitely didnt kill the yeast, its going crazy!

The only thing thats slightly odd (it might not be i'm really new at this) is that i can see the fermentation happening as it looks like someone has got an aquarium pump in my fermenter there's that much activity going on but it's not producing any foam on top it's still very "clean" looking, is that a problem? I'm thinking not as there is tons of activity happening.
