PH balance questions

I have been trying to undertsand what my ph should be. I use the test strips and usually have a 5.0 after mash. When do you test for ph? WHat should be the expected level? Does it matter based on the style of beer?

from my understanding 5 isnt to bad. I believe I have read that you want around 5.2-5.4...I am sure there are others that know more about this than I do. I just started looking into my ph levels recently.
