I plan to adjust the pH on my mead the following way. I'd appreciate any comments/suggestions.
I'm going to test the pH (digital meter) daily for the first five days after introducing the yeast and adjust it to 4.0 with potassium bicarbonate. Is there a limit on how much potassium bicarbonate I should add? I will also be aerating it at the same by pouring it back and forth between primaries.
This is not the first mead I've made but I going to do a better job this time.

Why are you adjusting it to 4.0?

The lower the pH, the less K-Meta you need for stabilizing.
Unless you are down near 3.0 there probably isn't a reason to try and correct it. You can use the bicarbonate to provide some buffering to avoid sudden swings.
