My cranberry lambic is coming along nicely after 2 months. Just transferred it out of the bucket and off the cranberries into a glass carboy to finish out aging

Here are some pics of the pellicle i discovered last night when i opened the fermenter that has my blonde ale that I pitched WLP630 Berliner Weisse into 8 months ago.

Here's my Tart of Darkness. It's been sitting since mid November and finally started to form a pellicle. I'll post more as it grows.

That's beautiful. It really makes me appreciate whoever the first person was who took a look at something like that and said, "Yeah, I think I'll drink it."
 
I'm doing a one gallon spontaneous/wild yeast experiment and could use some opinion. This beer is a month in.

I know the pellicle isn't highly formed yet, but any ideas on what might be eating away in there? I don't know if different bugs have their own signature looks or not. Thanks.

Check out this pellicle from a jug of hard cider. Naturally fermented. Started fermentation in November.

No clue about your bugs, but they're creating one beautiful landscape! :mug:

Here is a pale, low-gravity sour after 10 months fermenting in primary with ECY BugCounty. Started out at 1.029, intended as a kind of funky Berliner Weisse. I probably wouldn't try that again. Still, it will be interesting to see what flavor and aromas all those bugs can create in such a low-gravity beer.

I haven't tasted it in six months, but after four months it was subtly tart at 1.006. If the experience is still somewhat lacking after a year, I'll probably dry hop with some Citra and bottle to 4 volumes.

What is that black stuff in there??

Cat turds. Really brings out the viscosity and helps improves "hipster" rating of the beer since sour beers are sooooo last year

The black is just the reflection of the beer under the pellicle that you can see.

But seriously, cat turds.

5 month old lambic, top left in the better bottle.
the 3 one gallon guys are left over wort that i tossed a saved slurry of oud bruin into that are around 7-8 months old
