I'm curious. Did you ferment with the pits? I have always read (& been told), that any stone fruits should have the pits removed prior to fermentation.

Edit....I see that you discarded them.
I just did a orange, peach, mango hydromel at 8%, it's kegged and carbonating right now. I used the entire orange and sliced peaches that were froze. It's delicious without the carbonation so I can't wait to see what carbonation does to it.
 
That's not an air tight seal
Yeah, I guess your correct. It might be ok if the atmospheric pressure remained constant all the time. Over time with high pressure and low pressure systems as the weather changes it's probably been pushing air in and out constantly.

Even without pressure changes, too much oxygen ingress on the long run.
