Over Force carbonated Rootbeer? Bitter tasting

I started making rootbeer a few days ago with a 20lb cylinder of Co2 and a 2 liter bottle with a valve stem in the cap and at first I had a hard time getting enough fizz (maybe 30 psi). So I cranked it up to 95 psi and shook and filled a few times until the bottle stayed firm. So far so good I have carbonated water. This went pretty quick and easy. I have plenty of fizz (maybe a little too much). Then I added my syrup. But the rootbeer doesn't taste good.

It could be my extract, it could be my sugar amount, but I think it's too much Co2. How do I know I have enough in the mix? Will over carbing make it taste bitter/bad?
