Ok here is the story.

Brewed a single malt using Munich.
Used 14 lbs but did it in two 7 lb mashes.
Used 3 gallons of water with each BIAB.

Wound up w/4.5 gallons and after an hour boiling I had 4.25 gallons left
The problem is the SG is 1.106. Yes I know I could water it down, but I don't want to if I don't have to.

I have 2 packs of Safale K-97 yeast. Should I:
1-Use both when it cools off
2-Use one and if it stalls in a few weeks airate and then use the other pack

You need about 1.5 packs according to the mrmalty yeast pitching calculator. You don't want to aerate after fermentation, unless you want an oxidized beer.

Thanks skeezer. Still have time for another opinion. Good think I have two packs. I should look up that calculator.

Added 1 1/2 packs Safeale K-97 last night and put it out on the back deck around 11 pm.

This morning at 7 it was bubbling like CRAZY, and the sun was shining on it.

Moved it to the freezer/fermenter about 715.

Checked about 3 pm today and at a freezer temp of 65* it was still going crazy and lucky me no crap up the air lock. Only CO2.

Correct me if I'm wrong, but isnt that like 100% effeciency?

That was after boiling down 5 gallons to 4.25.

But as to your question well I don't know.

BIAB poured the wort back thru the grain twice and was quite happy w/the Brix readings.
