I have some old wlp565 saison yeast that has a best if used by date of 10/13/13. What would be the best starter for this? A large 2 liter starter? Or do you think it would be fine to just make a regular 1 liter starter. Anyone have experience with this type of situation?

I've been making small 1-Gal batches of the beer I plan to brew and test the viability that way.

All easily done on the kitchen stove.

Give it a week to ferment and if all goes well; brew, siphon and pitch the next W/E.

You get a few bonus bottles of beer as well.
