I came across some dme that I had with an old kit. The bag is unopened, but there's also no date to determine its age. What's the shelf life for it?

No clue about the shelf life, but make a starter, if it works try a beer. If it turns out bad it is an oh well experiment. :mug:

I had considered relegating it to starter malt. I am definitely not a fan of risking a batch of beer over it

I've made starters from 8 year old DME. Even factory sealed, never opened it became like a brick after a few years. I smashed it into smaller pieces, but it still took awhile to dissolve, the wort it made tasted fine, so did the resulting starter beer. I would have no problem using it in a real batch.

Now if it got very wet, it may have developed mold and/or dank and off flavors. Chop a piece off and taste.
