Hi,

I'm going to assume my Hydrometer was off because I didn't think this was possible.

My Beginning Gravity at start of boil was 1050 but my Starting Gravity post boil was 1058.

Is that even possible or did I goof my measurements?

After the boil there is the same amount of sugar, but a smaller volume of water. Therefore the gravity goes up. What was the volume of wort pre and post boil?

I usually end up with a OG 10 points over my pre-boil gravity (SG) since I collect 6.75 gallons and end up with 5.5.

post-boil volume X OG = pre-boil volume X SG.

Knowing this, you can adjust the boiloff rate to hit your target OG even if your mash/lauter efficiency wasn't what you planned. My SG varies by 4-5% but I am usually 1-2 points within my target OG using this measure-and-adjust method..

You're good. As previously stated, as you boil down, you loose water, not sugar. Your pre boil gravity readings will (or at least should) always be lower than your post boil readings.
