Is there a general idea where each should be throughout the process? Or does it vary which different types of beer?

it varies with beer type, grains used, mash temp, and yeast strain. a rough way to tell is to look at the Apparent attenuation for your yeast strain and og of your beer. meaning if your og is 1.060 and your yeast strain has an average of 75% AA you should be roughly in the 1.012 to 1.018 range for your fg. hope that makes sense
