Hoping to grab some bottles at the Beer Cellar on Friday to take home with me. Thorpe is your glassware also sold here, or is the only way to get that to order it online?
I will say Afterthought doesn't seem to stick around anymore. I went to grab some a couple weeks ago and they were out (the week before the membership release). Either way, any idea what time you're heading there Friday? I could get a little day drunk.

That was the first time in a while they were totally out of bottles. I’d be surprised if there’s not plenty still there on Friday. Lots more coming soon including the 330ml bottles of Faible and Table: Cascade once I get the labels!

Not sure yet, but I'll try to update plans as they come together. I imagine it would be afternoon-ish.

I stopped there yesterday for a restock on Faible: Yellow Plum and there was still quite a bit of it remaining. Lots of Petit Meer and Saison Meer as well.

Saison Illinois bottled on May 20, 2018

Opened up this one last night just as the storm was rolling into the Western Suburbs, and consider me impressed. Light lemon acidity, restrained Brett funk, crisp, well carbonated, and more hop character than I was expecting both in bitterness and aroma / flavor. Would be a perfect candidate for 4packs of 330ml bottles...

Think I've only got two more bottles of the "older" stuff left before moving into the last member releases.

I would LOVE for this one to eventually make it into 4-packs. Long-term goals :)

Saison Illinois = Illinois malt, hops, water with your house yeast blend? Also assuming a little higher IBU on this one to help keep the acidity in check?

Just strikes me as a very "approachable" beer for you that would kill in that format, if sourcing the ingredients isn't the bottleneck.

Correct but it's house blend and some additional Saccharomyces from Omega for a faster fermentation so less time in the barrel for the resident bugs to work. IBUs about the same as Saison Meer.

First of all, huge thanks to Thorpe for the glass (which is awesome) and for meeting me at Beer Cellar to discuss his beers, the brewery, and general beer stuff. I'm always partial to breweries where the brewers are willing to expound on their philosophies and approaches and I can get a good feel for what they are trying to do.

These beers are absolutely in my wheelhouse. Roughly between Hill Farmstead and Side Project in terms of the funk vs acidity balance. That's a big compliment coming from me, just in case it wasn't clear. Meers was my favorite of the three. Funk and fruity/lemony acidity, a rich buttery (but not diacetyl) character which I interpret as coming from the oak, and a beautiful full mouthfeel. Petit Meer was a nice "light" version of the base and perfect for a hot South Carolina fall day (and a cigar). Faible Yellow Plum was decidedly more acidic, with a good fruit character. My least favorite of the three (but still excellent), perhaps surprisingly but I really love a good mixed fermentation saison without fruit. I plan to stock up on Afterthought bottles next time I'm in Chicago (so, November). Fabulous beers that I'm excited to try more of in the future.

Quick add-on to my previous post: I shared these with all my local crew (took boss pours for photos and then poured out of my glass) and everyone was very impressed. One of my buddies said these are some of the best new beers he's tried in months. So it's not just me being a big fan, the reception was strong across the board.

...I don't say this lightly either. It would be convenient if I didn't need to drive a thousand miles to pick up Afterthought, but that's just the reality of the situation.

Sorry; it's become obligatory at this point.

Anyone stopping by the cellar on Friday? Excited to try some of the beers I missed (blackberry). Thorpe will there be any glassware available?

Thanks! I’m looking forward to it. No glassware unless they still have some of the tasters from the launch. We still have glasses on our website but we are running low on those so I’m going to have to order something else soon as the last time I checked egrandstand didn’t have the Durobor Charente in stock.

Drank through all the recently released beers. All really damn good. Gin/Dandelion still my fav, probably followed by Rhubarb and vermouth, then Sauvignon and Lilac.

Still consistently better then most wilds out there. The thing I enjoy about the Afterthought beers are that they kinda blend the line between a traditional saison (dry, herbal) and an American wild (tart, acidic, fruit driven). It’s tart, fruity, and acidic but not so much that a glass is a chore to drink, plus there’s nice herbal, floral characteristic to them as well. And the different fruits, spices, additives are always done in a nice, subtle way that compliments the base beers.

Been a while since I posted here so I thought I'd let everyone who's interested know that Saison Avec: Spruce is now at The Beer Cellar. Other recent drops include Saison Meer: Autumn (hey, it's still technically autumn), Saison Amer: Ekuanot, and Saison Avec: Meyer Lemon.

Also dropped off kegs today that should be on tap soon. The first is Brno, which is a new table-style saison with all Czech Saaz. Second is Bière de Pieces #8, which is a blend of Saison Meer: Pineapple Sage and barrel-aged Faible. The former will be out in bottles soon and the latter will also be part of the next Blended Barrel release.

Having only had a few, this description nails it. I'm pretty pumped to try the gin/dandelion and will bring it to an upcoming gin BA beers share and report back how it holds up :)
