Odds and ends, what can I make?

So aside from ordering more supplies online, I'd have to drive over an hour to the nearest home brew supply.

I haven't had a batch going for a few months and I feel it's time.

So like the cooking show chopped, I'm feeling like if I open my basket, I could make a brew with the odds and ends I have on hand.

Here is what I have:

some light malt extract
a variety of ale yeasts(plenty of yeast)

a variety of hops(especially cascade)

two bags of grains from the Brooklyn Brew shop kits, Bourbon Dubbel.


So here is where I am at. I can possibly just make a double batch of the Dubbel, two gallons instead of the one gallon they are intended for. OR I can get some info here and do a special concoction with the stuff I have and make a unique ale of some type.

Any suggestions? Ideally I'd like to use just the stuff I can get my hands on without a drive to the store or waiting for internet delivery.

Actual amounts may be more useful to try to figure something out for you, but you could always up the ABV on one kit of the Dubbel with the LME
