Hi !
I wanna soak 1 once oak chips for one week in Johnnie Walker Black Label 12 years . No bourbon available :(
1- Must I add the liquid too or only oaks ?
2- My 2nd fermentor is now 2 week aged . That will be ready for one week later ! May i have some problem for long 2nd fermention ?
OG was 1.065
after 2 weeks (2nd F ) was 1.020
and now it's four weeks aged .
3- What will happen if soak time get long about 60 days ? Is older better ?
 
I usually soak 2-3 ounces of oak chips with 2 or 3 jiggers of bourbon. Or Johnny Walker in your case. I let it soak in an airtight container in the fridge during primary fermentation. Then pour through sanitized hop sock into secondary, tie off the bag & drop it in. 7 or 8 days is plenty to get the flavor on the back without muddling the other flavors in the beer. I use the liquid too, since it soaks some resins out of the wood while the wood soaks up the liquor to replace them.
