Taking a spin at creating my second all-grain recipe (fifth batch). I want to make a hoppy, red pale ale. Thoughts on the recipe?
Main questions:
- I've seen a lot of mixed reviews on Chinook as late boil additions (very piney/spicy). How will they play with the Nugget as bittering hops?
- Do I need the CaraRed? Or is there a substitute?
- I'll be kegging: do I dry hop in secondary (I prefer the ~1 wk primary / ~2 wk secondary approach for clearing)? Or just put in a hop bag add to the keg?
I want to keep this as a pale ale and not an IPA, but liked the idea of over-hopping the beer (it's over the style guidelines for IBUs).
Recipe:
6.5# US 2-row
2# Munich
1# CaraRed (19L)
6 oz Crystal 120L
2 oz Roasted Barley (500L)
1 oz Nugget (11%) @ 60 min
1 oz Chinook (13%) @ 10 min
Mash 60 min @ 154F @ 1.25 qt/lb
Sparge for a 7 gallon boil
Dry hop: 2 oz Nugget
