...but a newbie nonetheless...

Took the probably unusual path of winemaking[10yrs] to distilling[7yrs] and now finally getting my feet wet in beer/cider for the past year. I like the faster turnaround I can get with beer over wine & spirits. I've been enjoying making up different recipes for various seasonal beers, tho I don't think I have carbonation down quite yet.
Been working in restaurants/bars for the last 15yrs so I've had access to some good stuff all around and I try to duplicate what I like at home.
I'm a searcher/researcher in that I figure somebody's probs already asked my question a hundred times so no need to pollute a forum with more repeats if I don't need to. I joined mostly for the archives but hopefully be able to offer some help or knowledge down the road, as I have on other forums.

Welcome to the forum. You're right, that's not the typical history of a noob here.

Feel free to ask questions, even if you're certain they have been asked before. In the years I've been hanging around here, both the typical equipment and processes have changed a lot, and those changes were stimulated by people asking the same questions over and over and seeing the answers slowly change over time.

That said - feel free to ask questions.

Carbing is a big deal to me (I like my fizzy pilsners ) so I finally opted for CO2 & corny kegs(5 gal, the old soda dispensers from my youth) after years of bottles and bottle carbing.

I think you'll find both of these statements to be true. Answers change over time, and at any given time the answers from different brewers vary. It keeps things (more) interesting.
