Could you use something like Nottingham in a brew that would traditionally call for a wheat type yeast, such as Munich? I realize I would not get the banana-ish flavor, but is there something else that would really seperate these yeasts? I was thinking I would end up with a fairly clean wheat ale..

Is my chemistry off or what??
 
Yes, you can do that... it will ferment and it will be beer, but it will not have the yeast character that you would get with the Munich yeast.
 
Go for it. I stopped following recipes and styles years ago. Once you know what results you'll get from different yeast strains, hops, and grains you'll be free to create your own brews with reasonable expctation of the results.
