The possibilities are endless really. Pairing new hops with a more classic variety is maybe my favorite thing to do now. Gives that “familiar” taste and aroma to a new profile.

cascade, Citra, Mosaic
Strata, Chinook
Citra, Chinook
Columbus, Strata

Been using a bunch of Mt Hood lately which is nice. Crystal can add a cool touch as well.

What did the Columbus/Strata combo yield for flavor/mouthfeel?

The only hops I find that really affect mouthfeel are the Australian hops. They tend to add body.

Strata dominated flavor and aroma just used a bit of Columbus to pump up the “dankness” of the Strata.

Forgot I just did a beer that was

2oz 2017 Cascade at 30
1oz Citra @ 5
3oz Mosaic WP
Strata/Chinook leaf in Hopback

Strata/2017 Cascade in DH

just took the first pull and it’s fantastic. Great blend of newer fruit forward aromas and flavors but with that added depth of Chinook/Cascade grapefruit and resin.

Found this 2017 Cascade that’s insane. $3/lb and so damn good. Don’t write off old hops. I’ve got some 2018 Citra and Mosaic right now that I love too.

Looking to dry hop for the first time,
I'm looking for something to blend well with the whirlpool hops (see recipe at the bottom)

I'm thinking maybe 1-3 oz of either;
El Dorado
CTZ
Waimea
Pacific Jade
Rakau
Azacca

Below is the recipe for an IPA,

Malts (15 lb 15 oz)
9 lb — Simpsons Pale Ale Golden Promise
3 lb — Viking Malt Munich Dark
1 lb 8 oz — Briess Rye, Flaked
1 lb — Dingemans Caravienne Malt
1 lb — Briess Oats, Flaked — Grain
7 oz — Briess Rice Hulls — Adjunct

HOPS-

Boil
0.2 oz Columbus/Tomahawk/Zeus (CTZ) 16.1% — Boil — 60 min
0.2 oz Pacific Jade 13% — Boil — 60 min

Whirlpool
3 oz — Columbus/Tomahawk/Zeus (CTZ) 16.1%
2.5 oz — Waimea 16%
2 oz — Pacific Jade 13%

Sabro needs to be used very sparingly. Maybe 20% of the total hop bill and it will still be strong. Strata plays well with a lot of hops and helps bring that dank earthy notes to it which helps layer complexity.
A spanish brewery made a beer using Incognito hops and it was Citra and Incognito Sabro at whirpool and then DH with the Incognito Sabro, it was harsh but amazing, probably due to the nature of the product
