Hi all,

Haven't brewed too many NEIPAs, but am planning on brewing one for a birthday party this spring and I have a few questions. Whenever I've brewed NEIPAs in the past, I've generally brewed Braufessor's NEIPA from the recipe threads. That said, I have a bunch of unused hops and grains that I'm looking to use up, so I'm departing from his recipe and building my own. See below.

I have two main questions for the NEIPA fanatics in this chat:

(1) I usually include 4-6 ounces of honey malt for a ~5.5 gallon batch, but have decided to drop it from the recipe due to the all-Golden Promise base malt for this recipe (Trying to use up a bunch of GP that I bought. GP skews slightly sweet, so I feel like the honey malt is redundant) -- do others agree with that change, or is there value in retaining the honey malt?

(2) I've never brewed with Strata or El Dorado hops, although I've loved commercial beers brewed with them -- what are your thoughts on my hop bill? Any tweaks to the ratios?

IBU (tinseth): 49.31
SRM (morey): 5.28

FERMENTABLES:
10.5 lb - Golden Promise Pale Ale Malt (72.4%)
2 lb - Flaked Oats (13.8%)
2 lb - White Wheat (13.8%)

HOPS:
3 oz - Strata , Type: Pellet, AA: 13.1, Use: Whirlpool for 15 min, IBU: 24.53
2 oz - El Dorado, Type: Pellet, AA: 13.3, Use: Whirlpool for 15 min, IBU: 16.6
1 oz - Citra, Type: Pellet, AA: 13.1, Use: Whirlpool for 15 min, IBU: 8.18
3 oz - Strata , Type: Pellet, AA: 13.1, Use: Dry Hop for 0 days
2 oz - El Dorado, Type: Pellet, AA: 13.3, Use: Dry Hop for 0 days
1 oz - Citra, Type: Pellet, AA: 13.1, Use: Dry Hop for 0 days

YEAST:
Imperial Yeast - A38 Juice

MASH GUIDELINES:
1) Target Temp: 154 F, Time: 60 min
 
All in all it looks fine to me, the honey malt will also add a little to your srm giving a slight orange color, but nothing wrong with leaving it out. You could go with a higher white wheat percentage but also not neccessary. The only thing I would do is up your dry hop amount, ideally you'd want to aim for 2 oz per gallon in the dry hop, so seeing you have 6gallon in the fermenter you want to be around 12oz for your dry hop. Ratios are up to you, but increasing citra is always a safe bet.

Curious, what temperature are you planning for your whirlpool additions?
 
Curious, what temperature are you planning for your whirlpool additions?
I usually add hops at 170F. Sometimes I hold the whirlpool temp steady, other times I just keep cooling after the 170 addition. I try not to add hops when the wort is above 170, I've experienced a bit of harshness from time to time.
