I am currently mashing an APA with a 10 pound grain bill with an ideal SRM around 5. I wanted to do a light body infusion mash at 150 for 75 minutes. I over shot my temps...20 minutes in and I am at 154. My mash tun holds temps so it'll end no lower than 152.
Should I shorten my mash time to 60 minutes or continue for 75?
