I'm brewing today, I'll probably be pitching around 8-9pm. It's a maibock, 1.071 OG.

I made a 1 liter starter with plans of stepping it up to 2 liters. Well, that didn't happen yesterday.

Should I still step it up right now? It'll have 7-8 hours to ferment.

I say yes for sure if you are using a lager yeast, mrmalty says you need almost a 8 liter starter for that with a simple starter, 3 liter if you are on a stir plate.
