Need help with off flavor.

Hey guys, me and my brother both brewed an identical kit and both got a beer that tasted.... Funny. I cannot really describe the taste, but it tasted pretty bad. Since then I have moved to all grain and have brewed some great beers. However, my last all grain batch had that weird taste again. I thought the first time it was due to bad extract, but now I got it with my all grain batch... I am stumped with all of the off flavor charts it does not seem to match up with any of them. And on top of that... The recipe was similar to others I have done and no weird errors were made. Any ideas? Did I have an invisible infection or something?:confused:
 
Without knowing the flavor, it's hard to help, but things that both beers may have had in common was their style, their hops or the water you used. For example, there is a flavor that Simcoe hops have when used for bittering that I don't care for - I think most folks call it dank - but I can't say for sure, because I don't know what "dank" tastes like...

Give us a little more info - what did the recipes have in common?
 
They are both IPAs. It is not hop flavors because I have used them before. The only thing I can say for sure is I can smell the off flavor as well as taste it. It easily cuts through the hop profile which was dry hopped heavily.
 
2 row crystal 40 malt. 152 mash temp. 64 f fermentation. Two packets of dry yeast us-05 rehydrated. Og was around 1.063. Ctz bittering simcoe at 30 centennial at 15 10 5 0. Dry hopped with cenntenial. Fg was 1.012.

So, of all of those, what did your extract IPA and your AG IPA have in common? It might be an undesirable flavor to you, but it may just be an interaction among ingredients that you don't care for. If you want to hunt it down, and feel it was the SAME flavor in both beers, look for what they had in common.

Only thing I can think of is perhaps my tap water. It is possible that those two times levels of disinfectant in the water were raised. I might have to get a water test kit.
 
Could the off flavor be described as over ripe peaches? This flavor can appear fermenting with SA-05 below 65°

No. It is not a fruity flavor at all. Plus the first extract beer was fermented at >70 degrees.

Cqn chloromine used by water disinfection plant cause these bad smells and flavors?
 
I have this one beer still kegged can a tablet save my beer? Or does it have to be used before brewing?
 
needs to be done before brewing. how long was your primary? even though the beer attenuated to the right level, if you pull it from the yeast a day or two early there can still be fermentation byproducts present that the yeast have not yet cleaned up.
 
Chlorine/chloramine react with phenol from yeast and malt and create chlorophenols, once it's done that's it. Find out from your municipality for sure which it is.
