I'm stuck with coming up with something, and I have such a crazy hodgepodge of ingredients.
I have lamb chops for the grill.
But I have three small avocados that must be used today.
I have various other items- mangoes, tomatoes, lime, onion, cilantro, oranges, homemade salsa verde (which is HOT) and so on. I want something that will go well with grilled lamb. I want something different than plain old guacamole.
I'm pretty creative, but I'm at a loss. I thought we were having fish (again) so I made some homemade salsa verde to serve over it, thinking about having guacamole along side. The salsa will keep and not have to be used, of course- but what do I do with these avocados that will NOT last another day?
