I'm stuck with coming up with something, and I have such a crazy hodgepodge of ingredients.

I have lamb chops for the grill.

But I have three small avocados that must be used today.

I have various other items- mangoes, tomatoes, lime, onion, cilantro, oranges, homemade salsa verde (which is HOT) and so on. I want something that will go well with grilled lamb. I want something different than plain old guacamole.

I'm pretty creative, but I'm at a loss. I thought we were having fish (again) so I made some homemade salsa verde to serve over it, thinking about having guacamole along side. The salsa will keep and not have to be used, of course- but what do I do with these avocados that will NOT last another day?
 
You could make a salad out of the mangoes, lime, and oranges maybe throw in a little cilantro possibly a few minced onions.. nah no onions. Make guacamole with a twist, throw in some dried mint if you have any, a little lime juice and use as a condiment for the lamb. IDK. The salsa, just save for later.
 
White rice with mango/lime/cilantro sauce, sliced avocado on top of that, meat on top of that. Garnish with fresh cilantro.
 
I'd make a "pico" out of the avacado (cut into small cubes), mango, tomato, onion (just a little bit), oranges, and a little lime juice (no salsa, onion, or cilantro). All diced up and tossed together, and served over the lamb.
 
Nothing was growing in South Texas, either, when I left it last month. So there. :D

Often times grocery stores have fresh mint available in the produce section. If not, dried mint works well.

Hey, I have a tiny green tomato on my tomato plant! It's spring here now. But no mint, sorry to say. My parsley plant looks beautiful.

I ended up making a "chutney" with an orange, part of a mango, those three avocados, 1/2 of a ripe tomato, a big squeeze of lime and a tiny bit of minced red onion. The avocados were very soft, so they didn't stay in nice cubes but I took a taste of this concoction, and it's pretty good! I think the mint would be excellent, but I don't see any right now. There is a nice prickly pear over the fence, though, and I thought about cutting some of the purple part but I'm too lazy. :D
