I purchased a mini mash kit from AHBS. It has me putting my grains in a bag and steeping them in heated 2 1/2 gallons of water in the brew pot, then sparge. I normally don't use grain bags. I just pour all my grains into a pot of heated water, approx. 165 degrees, then place in the oven set to the lowest temp, then after 45 min or so, pour out grains and water into another pot with a collander on top to strain, then sparge.

My question is, with 4.25 pounds of grains, how much water should I use to soak my grains in, or does it matter.

Hi,
I ran it through BeerSmith, and for 4.25 lbs of grain, a single step infusion mash would be 5.31 quarts of water at 166 F to reach a step temperature of 154F for the mash.
