Need advice. Missed Target on Guinness FES Clone

My first all grain batch.

Mashed the following at 152 fro 60 minutes:

13 lbs Pale Ale Malt
2 lbs Flaked Barley
1 lb Black Barley
5 gallons water

After the 60 minute mash, I ran off the wort until free of grain (recirculated 4 one gallon pitchers). I then added 3 gallons of water at 175 degrees while draining the wort into my boil kettle. My target was 1.078, but I only hit 1.062. This seems way off. I moved forward pitched my yeast and hoped for the best. Could I get bad results?
 
Did you stir the hell out of those 3 gallons and grains when you sparged?
 
I've recently started AG and have been low on gravity points after my first batch but have been researching and have found the recommendation of stir, stir, stir is probably the most effective. I'm trying that next brew. I did stir more during my first batch about every 10-15 minutes.
