I have been thinking about putting a stout faucet in my soon to be kegerator.

I understand the beer gas and [most of] the pros and cons.

So, if I have a keg that has been undergoing force carb ( 2 days at 30 ), what do I need to do to move this to beer gas for a nice pour?

Once it is carbonated, all you have to do is connect it to the beer gas at about 4 times the pressure. This assumes you gas is a 25%CO2/75%N2 mix.

+1 and a stout faucet with the appropriate restrictor disc.
